Cooking Made Easy with Minute Rice!

When I was asked by the lovely ladies at The SITS Girls to create a recipe using Minute® Rice, I was super excited! I’ve been experimenting with eating gluten free (though I “cheated” last night with a delicious Hickory Smoked Burger from my favorite burger place, Deemer’s American Grill – oopsie), and brown rice is one of the few wheat-free whole grains you can eat on a gluten-free diet.
I usually buy a package of uncooked rice from my local 99 Cent Store and let it simmer on the stove for 45+ minutes to cook, but I was excited to try something that would be much quicker and a better fit for my busy, always-on-the-go schedule. When I get home from the gym, I’m always looking for an easy post-workout dinner that’s nourishing and high in protein, but feels light and refreshing.
And since it seems like summer this week in California (85+ degrees – yay!), I decided to do something that reminds me of sunny beaches and fresh summertime fruit – Coconut Mango Minute® Rice paired with one of my favorite fish recipes, Jamie Eason’s Fish in Foil.
These two items took less than half an hour to prepare (combined!) and tasted specacular (my fiance approved and our little chiweenie Mishka kept trying to steal bites from our plates!). The meal reminded me of one of my favorite restaurants on Maui – Mama’s Fish House - and I didn’t even have to leave the mainland to get it. You can replicate this meal anywhere, anytime.
Coconut Mango Minute® Rice Ingredients:

- Minute® Rice Brown Rice
- 1/4 tsp. Sea Salt
- 1 c. Coconut Milk
- Olive Oil or Butter
- Mango
- Pineapple
- 1/4 tsp. Ginger
- Water
How to Make It:
- Prepare 2 cups of Minute® Rice according to box
- Add coconut milk, salt, ginger, olive oil or butter to taste and simmer on low until all liquid is absorbed by the rice
- Top with chopped pineapple and mango (I added coconut flakes on top too!)
Jamie Eason’s Fish in Foil Ingredients:

- Tilapia
- Asparagus
- Lemon
- Pepper
- Fish seasoning (I used Lawry’s Garlic Salt)
- Foil
How to Make It:

- Preheat oven to 375 degrees
- Use one piece of foil per fish.
- Add lemon juice.
- Sprinkle fish seasoning on top.
- Add pepper, lemon slices.
- Add veggies on top.
- Fold into foil down from the top leaving air for steaming
- Place each foil on a cookie sheet and bake for 14-15 min.

I LOVE this recipe because it never tastes “fishy.” It’s so light and tender, and was the perfect complement to my Coconut Mango Minute® Rice – yum!

The recipe I used for the Minute® Rice made enough to last several meals and I’ve eaten it a couple times since as a snack with salsa and avocado on top – you can dress it up with pretty much any type of flavor you want and it tastes great.
